Instructions

  1. 1

Toast the dried chillies in a dry skillet over medium heat for 30 seconds per side until fragrant. Soak in boiling water for 15 minutes until softened. Drain.

  2. 2

Blend the soaked chillies, garlic, vinegar, achiote paste, cumin, oregano, cinnamon, 1 tsp salt, and 2 tbsp water until completely smooth.

  3. 3

Coat the pork slices thoroughly in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

  4. 4

Heat a large cast iron skillet or grill pan over high heat. Cook the pork in batches for 3–4 minutes per side until deeply caramelised and slightly charred at the edges. Rest for 5 minutes, then chop roughly.

  5. 5

Grill the pineapple rings for 2 minutes per side until caramelised. Dice finely.

  6. 6

Warm the tortillas in a dry skillet. Fill each with chopped pork and diced pineapple. Top with finely diced white onion, fresh cilantro, and a squeeze of lime. Serve with salsa verde.
