Instructions

  1. 1

Mix the flours and 350 g of the water in a large bowl until no dry flour remains. Cover and rest (autolyse) for 45 minutes.

  2. 2

Add the starter and salt with the remaining 25 g water. Squeeze and fold until fully incorporated. The dough will feel sticky — that's correct.

  3. 3

Perform 4 sets of stretch-and-folds every 30 minutes over 2 hours: wet your hand, grab the dough from one side, stretch it up and fold it over. Rotate the bowl 90° and repeat 4 times per set.

  4. 4

After the final fold, let the dough bulk ferment at room temperature (21–24°C) for a further 2–4 hours until it has grown by 50–75% and looks airy and domed.

  5. 5

Turn the dough onto an unfloured surface. Shape into a tight round by folding the edges to the centre, then flipping and dragging toward you to build surface tension.

  6. 6

Place seam-side up in a rice-flour-dusted banneton. Cover and refrigerate overnight (8–16 hours) for a slow, cold proof.

  7. 7

One hour before baking, place a Dutch oven in the oven and preheat to 250°C (480°F). Turn the cold dough onto parchment, score with a lame or sharp knife at a 45° angle, and lower into the hot Dutch oven. Bake covered for 20 minutes, then uncovered for 20–25 minutes until deeply caramelised. Cool on a wire rack for at least 1 hour before slicing.
