Instructions

  1. 1

Brown the butter: melt it in a saucepan over medium heat, swirling constantly, until it turns deep golden and smells nutty. Pour into a large bowl and cool for 15 minutes.

  2. 2

Whisk both sugars into the browned butter until combined. Add the eggs, egg yolk, and vanilla. Whisk vigorously for 1 minute until the mixture is thick and glossy.

  3. 3

Fold in the flour, baking soda, and salt until just combined. Fold in the chocolate. Cover and refrigerate the dough for at least 30 minutes (or up to 72 hours for deeper flavour).

  4. 4

Preheat oven to 175°C (350°F). Line baking sheets with parchment. Scoop the dough into balls (about 2 tbsp each) and place 5 cm apart.

  5. 5

Bake for 11–13 minutes until the edges are set and golden but the centres still look slightly underdone. They will firm up as they cool.

  6. 6

Immediately sprinkle with flaky sea salt. Cool on the baking sheet for 5 minutes before transferring. Eat warm for maximum chocolate pull.
