Classic Crème Brûlée

Silky vanilla custard beneath a perfectly even, glass-thin caramel crust — the satisfying crack of a spoon through brûlée is one of the great moments in dessert.

Ingredients

  • 500 ml double cream
  • 1 vanilla pod, split and seeds scraped (or 2 tsp vanilla bean paste)
  • 6 large egg yolks
  • 100 g caster sugar, plus extra for the topping
  • Pinch of fine sea salt

Instructions

  1. 1

Preheat the oven to 150°C (300°F). Place four 150 ml ramekins in a deep roasting tray. Heat the cream with the vanilla pod and seeds over medium heat until just steaming — do not boil. Remove from heat and infuse for 15 minutes.

  2. 2

Whisk the egg yolks, sugar, and salt together until pale and slightly thickened. Do not whisk vigorously — you want minimal air bubbles in the custard.

  3. 3

Remove the vanilla pod from the cream. Pour the warm cream into the yolk mixture in a slow, steady stream, whisking gently. Strain through a fine sieve.

  4. 4

Divide the custard evenly between the ramekins. Pour enough boiling water into the roasting tray to come halfway up the sides of the ramekins — the water bath ensures gentle, even cooking.

  5. 5

Bake for 30–35 minutes until the custards are just set with a slight wobble in the centre — they will firm up as they cool. Remove from the water bath and cool to room temperature.

  6. 6

Refrigerate for at least 4 hours or overnight. When ready to serve, blot any condensation from the surface with a paper towel.

  7. 7

Sprinkle an even, thin layer of caster sugar over each custard. Caramelise with a kitchen torch in slow, circular motions until the sugar is amber and glassy. Wait 60 seconds for the crust to harden, then serve immediately.
