Instructions

  1. 1

Bring the chicken stock to a simmer in a large pot. Add the chicken breasts and poach gently for 15–18 minutes until cooked through. Remove the chicken and set aside to cool slightly. Keep the stock at a gentle simmer.

  2. 2

Add the orzo to the simmering stock and cook for 8–10 minutes until tender.

  3. 3

Shred the poached chicken into bite-sized pieces and return to the pot.

  4. 4

Make the avgolemono: whisk the eggs in a bowl until frothy. Gradually whisk in the lemon juice. Slowly ladle about 2 cups of the hot broth into the egg mixture, whisking constantly — this tempers the eggs so they don't scramble.

  5. 5

Pour the tempered egg mixture back into the pot, stirring gently. Heat over low heat for 2–3 minutes, stirring, until the soup thickens slightly and turns creamy. Do not boil.

  6. 6

Season with salt and white pepper. Ladle into bowls and garnish with fresh dill and a slice of lemon.
