Overnight Cinnamon Rolls

Pillowy, pull-apart cinnamon rolls with a buttery brown sugar filling and a thick cream cheese frosting — made the night before so all you do in the morning is bake and ice them.

Ingredients

  • For the dough: 500 g strong white flour, 7 g instant yeast, 50 g caster sugar, 1 tsp fine salt, 2 eggs, 240 ml whole milk (warm), 80 g unsalted butter (softened)
  • For the filling: 100 g unsalted butter (very soft), 150 g light brown sugar, 2 tbsp ground cinnamon, 1 tsp ground cardamom
  • For the cream cheese frosting: 200 g full-fat cream cheese (room temperature), 100 g icing sugar (sifted), 1 tsp vanilla extract, 2–3 tbsp whole milk

Instructions

  1. 1

Make the dough: combine the flour, yeast, sugar, and salt. Add the eggs and warm milk and mix until a shaggy dough forms. Knead for 5 minutes, then add the softened butter a little at a time, kneading until fully incorporated and the dough is smooth and slightly tacky — about 8 minutes total.

  2. 2

Place in a lightly oiled bowl, cover, and prove at room temperature for 1 hour until doubled. Punch down, cover tightly, and refrigerate overnight. The cold slow-prove develops flavour and makes the dough much easier to roll.

  3. 3

The next morning: remove the dough from the fridge and let it sit for 30 minutes. Roll out on a lightly floured surface to a 40 × 50 cm rectangle, about 5 mm thick.

  4. 4

Spread the very soft butter evenly over the dough, right to the edges. Mix the brown sugar, cinnamon, and cardamom together and scatter evenly over the butter, pressing lightly.

  5. 5

Roll the dough tightly from the long edge into a log. Cut into 12 equal rounds with a sharp knife or unflavoured dental floss. Arrange in a buttered 23 × 33 cm baking dish, cut-side up, with a little space between each.

  6. 6

Cover and prove for 45–60 minutes until puffed and touching. Preheat the oven to 180°C (350°F). Bake for 22–25 minutes until golden on top and cooked through. Cool for 10 minutes.

  7. 7

Make the frosting: beat the cream cheese until smooth. Add the icing sugar, vanilla, and enough milk to make a thick, pourable frosting. Spread generously over the warm rolls — it will melt slightly into the swirls. Serve immediately.
