Coq au Vin

The quintessential French braise — chicken pieces slow-cooked in a full bottle of Burgundy with lardons, pearl onions, and mushrooms until the sauce is glossy and the meat falls from the bone.

Instructions

  1. 1

The day before (optional but recommended): marinate the chicken pieces in the wine with the thyme and bay leaves overnight in the fridge. This deepens the flavour considerably. Pat the chicken dry before cooking.

  2. 2

Season the chicken generously. Heat the olive oil in a large Dutch oven over medium-high heat. Brown the chicken pieces in batches, skin-side down first, for 4 minutes per side until deeply golden. Remove and set aside.

  3. 3

In the same pot, fry the lardons until the fat renders and they begin to crisp. Add the pearl onions and cook for 5 minutes until lightly golden. Add the garlic and tomato paste and cook for 1 minute.

  4. 4

Sprinkle the flour over the onion mixture and stir to coat. Pour in the wine (and marinade if using) and the stock, scraping up all the browned bits. Add the herbs and bring to a simmer.

  5. 5

Return the chicken to the pot, skin-side up. Cover and braise over the lowest heat (or in a 160°C/325°F oven) for 1 hour until the chicken is completely tender.

  6. 6

Meanwhile, sauté the mushrooms in butter in a separate pan over high heat until golden. Season and set aside.

  7. 7

Remove the chicken. Discard the herb sprigs and bay leaves. If the sauce needs thickening, reduce it over high heat for a few minutes. Stir in the mushrooms, return the chicken, and warm through. Scatter with parsley and serve with crusty bread or buttered egg noodles.
