Korean Fried Chicken (Yangnyeom)

Double-fried chicken with a shattering, glass-thin crust lacquered in a sticky gochujang glaze — the double-fry technique is the secret to the legendary crunch that holds up under the sauce.

45 min4 servings

Ingredients

  • 1.2 kg chicken wings or drumettes
  • For the batter: 100 g potato starch (or cornflour), 50 g plain flour, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp salt, 150 ml ice-cold sparkling water
  • Neutral oil, for deep frying
  • For the yangnyeom sauce: 3 tbsp gochujang, 2 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tbsp sesame oil, 4 cloves garlic (minced), 1 tsp fresh ginger (grated), 1 tbsp brown sugar
  • To serve: toasted sesame seeds, thinly sliced spring onions, pickled daikon

Instructions

  1. 1

Pat the chicken completely dry — moisture is the enemy of crunch. Season lightly with salt and let sit uncovered in the fridge for 30 minutes to dry out further.

  2. 2

Make the sauce: combine all sauce ingredients in a small saucepan and simmer over medium heat for 3–4 minutes until slightly thickened and glossy. Set aside.

  3. 3

Make the batter: whisk the dry ingredients together. Add the ice-cold sparkling water and mix briefly — lumps are fine and actually desirable. Do not overmix.

  4. 4

Heat the oil to 160°C (320°F) in a deep pot. Dip the chicken pieces in the batter and fry in batches for 8 minutes. They should be pale golden, not dark. Drain on a wire rack.

  5. 5

Increase the oil temperature to 190°C (375°F). Fry the chicken a second time for 3–4 minutes until deeply golden and shatteringly crisp. The double-fry drives out residual moisture and creates the signature crust.

  6. 6

Drain briefly on the wire rack, then immediately toss in the warm yangnyeom sauce until every piece is evenly coated and lacquered.

  7. 7

Pile onto a platter and scatter with sesame seeds and spring onions. Serve immediately with pickled daikon on the side — the crunch is at its peak in the first 10 minutes.
