Instructions

  1. 1

Soak the rice noodles in cold water for 30 minutes until pliable but not soft. Drain and set aside.

  2. 2

Mix the tamarind paste, fish sauce, oyster sauce, and sugar in a small bowl. Set aside.

  3. 3

Heat a wok over very high heat until smoking. Add 1 tbsp oil. Stir-fry the prawns for 1–2 minutes until just pink. Remove and set aside.

  4. 4

Add the remaining oil and garlic to the wok. Stir for 30 seconds. Add the drained noodles and the sauce. Toss vigorously for 2 minutes until the noodles absorb the sauce.

  5. 5

Push the noodles to one side. Crack the eggs into the empty space and scramble briefly, then fold into the noodles before fully set.

  6. 6

Return the prawns to the wok. Add the bean sprouts and spring onions. Toss for 30 seconds — the sprouts should retain their crunch. Divide among plates. Top with crushed peanuts and chilli flakes. Serve with lime wedges and extra bean sprouts.
