Instructions

  1. 1

Preheat oven to 220°C (425°F). Line a 12-hole muffin tin with paper cases or grease well.

  2. 2

Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a large bowl.

  3. 3

In a separate bowl, whisk together the sugar, eggs, buttermilk, oil, melted butter, and vanilla until combined.

  4. 4

Pour the wet ingredients into the dry and fold until just combined — the batter should be lumpy. Do not overmix.

  5. 5

Toss the blueberries with 1 tbsp of the flour mixture (this prevents them sinking). Fold gently into the batter.

  6. 6

Divide the batter evenly among the muffin cases, filling them to the very top. Sprinkle generously with demerara sugar. Bake at 220°C for 5 minutes, then reduce to 190°C (375°F) and bake for a further 15–18 minutes until a skewer comes out clean. Cool in the tin for 5 minutes before transferring to a rack.
