  • 500 g (1 lb) large shrimp, peeled and deveined
  • 350 g (12 oz) linguine
  • 6 cloves garlic, thinly sliced
  • 1 small shallot, finely diced
  • 150 ml (⅔ cup) dry white wine
  • 60 ml (¼ cup) fresh lemon juice
  • 60 g (4 tbsp) unsalted butter, cold and cubed

Instructions

  1. 1

Cook the linguine in well-salted boiling water until al dente. Reserve 1 cup of pasta water before draining.

  2. 2

Pat the shrimp dry and season with salt and pepper. Heat 2 tbsp olive oil in a large skillet over high heat. Cook the shrimp for 1–2 minutes per side until pink and just cooked through. Remove and set aside.

  3. 3

Reduce heat to medium. Add the remaining oil, shallot, garlic, and chilli flakes. Cook for 2 minutes until softened and fragrant — do not let the garlic brown.

  4. 4

Pour in the white wine and lemon juice. Simmer for 2 minutes until reduced by half.

  5. 5

Add the drained linguine and a splash of pasta water. Toss over medium heat. Add the cold butter cubes one at a time, tossing constantly to emulsify into a glossy sauce.

  6. 6

Return the shrimp to the pan and toss to combine. Scatter with parsley and serve immediately with lemon wedges.
