Instructions

  1. 1

Place each pork cutlet between two sheets of cling film. Pound with a meat mallet or rolling pin to an even 4–5 mm thickness. Season with salt and pepper.

  2. 2

Set up a breading station: flour in one shallow dish, beaten eggs in another, breadcrumbs in a third. Coat each cutlet in flour (shake off excess), then egg, then breadcrumbs, pressing gently to adhere.

  3. 3

Heat a generous layer of oil (about 1 cm deep) in a large skillet over medium-high heat until shimmering. Add a small knob of butter.

  4. 4

Fry the schnitzels for 2–3 minutes per side until deeply golden. The key is to keep the pan moving slightly so the oil swirls over the top — this creates the characteristic rippled crust. Drain on paper towels.

  5. 5

Wipe the pan. Melt 2 tbsp butter over medium heat until it turns golden brown and nutty. Add the capers and lemon juice — it will sizzle. Pour immediately over the schnitzels.

  6. 6

Serve at once with lemon wedges, fresh parsley, and a simple green salad or potato salad.
