  • 2 tbsp neutral oil (grapeseed or avocado)
  • 3 tbsp unsalted butter

  • Juice and zest of 1 lemon
  • 2 tbsp fresh flat-leaf parsley, chopped
  • Flaky sea salt and cracked black pepper

Instructions

  1. 1

Pat the salmon fillets completely dry with paper towels — moisture is the enemy of a crisp skin. Season generously on both sides with salt and pepper.

  2. 2

Heat the oil in a heavy stainless-steel or cast-iron skillet over high heat until shimmering and just beginning to smoke.

  3. 3

Place the salmon skin-side down. Press gently with a spatula for the first 30 seconds to prevent curling. Cook undisturbed for 4–5 minutes until the skin is deep golden and the flesh is opaque two-thirds of the way up.

  4. 4

Flip the fillets and cook for just 60–90 seconds on the flesh side — the residual heat will finish the centre. Transfer to a warm plate.

  5. 5

Reduce heat to medium. Add the butter to the pan and let it foam. Add the garlic and capers and cook for 1 minute until the garlic is golden.

  6. 6

Remove from heat, add the lemon juice and zest, and swirl to emulsify. Spoon the sauce over the salmon, scatter with parsley, and serve immediately.
