Beef Cheek Ragù

Beef cheeks braised low and slow in red wine until they dissolve into a silky, deeply flavoured ragù — tossed through wide pappardelle and finished with Parmesan. A true Sunday showstopper.

Instructions

  1. 1

Preheat oven to 160°C (325°F). Season the beef cheeks generously with salt and pepper. Heat the olive oil in a large Dutch oven over high heat. Sear the cheeks for 3–4 minutes per side until deeply browned all over. Remove and set aside.

  2. 2

Reduce heat to medium. Add the onion, carrot, and celery to the pot and cook for 8 minutes until softened. Add the garlic and tomato paste and stir for 2 minutes.

  3. 3

Pour in the red wine and bring to a boil, scraping up any browned bits. Simmer for 5 minutes until reduced by half.

  4. 4

Add the crushed tomatoes, stock, rosemary, thyme, and bay leaves. Return the beef cheeks to the pot. The liquid should come about two-thirds up the meat.

  5. 5

Cover and braise in the oven for 3–3.5 hours until the cheeks are completely tender and falling apart. Remove the cheeks and shred coarsely with two forks. Discard the herb sprigs and bay leaves. Return the meat to the sauce and stir to combine. Taste and adjust seasoning.

  6. 6

Cook the pappardelle in well-salted boiling water until al dente. Reserve 250 ml (1 cup) pasta water. Toss the pasta through the ragù, adding pasta water to loosen to a glossy, coating consistency. Serve with grated Parmesan and fresh parsley.
