Fluffy Japanese Soufflé Pancakes

Cloud-like soufflé pancakes that stand 5 cm tall — the secret is a stiffly whipped meringue folded into the batter and cooked low and slow under a lid to steam-set the interior.

40 min2 servings

Ingredients

  • 2 large eggs, separated
  • 2 tbsp whole milk
  • ½ tsp vanilla extract
  • 3 tbsp plain flour
  • ½ tsp baking powder
  • 2 tbsp caster sugar
  • ¼ tsp cream of tartar
  • Pinch of fine sea salt
  • Neutral oil or butter, for the pan
  • To serve: maple syrup, softened butter, fresh berries, icing sugar

Instructions

  1. 1

Whisk the egg yolks, milk, and vanilla together. Sift in the flour and baking powder and mix until smooth — a few small lumps are fine. Do not overmix.

  2. 2

In a clean bowl, whip the egg whites with the cream of tartar and salt until foamy. Gradually add the caster sugar and whip to stiff, glossy peaks — the whites should hold their shape when the bowl is inverted.

  3. 3

Fold one third of the meringue into the yolk batter to loosen it. Gently fold in the remaining meringue in two additions, using a large spatula with light, sweeping motions. Stop as soon as no white streaks remain.

  4. 4

Heat a non-stick pan over the lowest possible heat and brush lightly with oil. Using a large spoon or ice cream scoop, mound the batter into tall rounds — each pancake should be about 5 cm high.

  5. 5

Add 1 tbsp of water to the pan (not on the pancakes) and immediately cover with a lid. Cook for 5–6 minutes until the bottoms are set and golden.

  6. 6

Carefully flip each pancake using two spatulas. Add another splash of water, cover, and cook for a further 4–5 minutes until cooked through — a skewer should come out clean.

  7. 7

Serve immediately — soufflé pancakes deflate within minutes. Stack on warm plates with a generous pat of butter, maple syrup, fresh berries, and a dusting of icing sugar.
