Roasted Tomato & Goat Cheese Tart

Instructions

  1. 1

Preheat oven to 200°C (400°F). Toss the tomatoes with the olive oil, balsamic vinegar, salt, and pepper on a baking tray. Roast for 20 minutes until softened and slightly caramelised. Set aside.

  2. 2

Beat together the goat cheese, cream cheese, garlic, thyme, and basil until smooth. Season with salt and pepper.

  3. 3

Unroll the puff pastry onto a parchment-lined baking tray. Score a 2 cm (¾ inch) border around the edge with a knife, being careful not to cut all the way through. Prick the inner rectangle all over with a fork.

  4. 4

Brush the border with beaten egg. Spread the goat cheese mixture evenly over the inner rectangle.

  5. 5

Arrange the roasted tomatoes over the cheese, cut-side up, in a single layer.

  6. 6

Bake for 20–25 minutes until the pastry is puffed and deeply golden. Drizzle with honey and scatter with fresh thyme leaves and flaky sea salt. Serve warm or at room temperature.
