Silky, smoky hummus swirled with sweet roasted red peppers — infinitely better than anything from a tub.

  • 3 tbsp tahini
  • 2 cloves garlic

Roasted Red Pepper Hummus

Instructions

  1. 1

If roasting your own peppers: char them directly over a gas flame or under a hot grill, turning until blackened all over. Place in a covered bowl for 10 minutes, then peel, seed, and roughly chop.

  2. 2

For the smoothest hummus, peel the chickpeas by pinching each one between your fingers. It takes 5 minutes and makes a significant difference to the texture.

  3. 3

Add chickpeas, roasted peppers, tahini, garlic, lemon juice, paprika, and cumin to a food processor. Blend for 1 minute.

  4. 4

With the motor running, drizzle in the olive oil and 3–4 tbsp of the reserved chickpea liquid. Blend for 3–4 minutes until completely smooth and creamy. Season with salt.

  5. 5

Transfer to a serving bowl. Use the back of a spoon to create a swirl. Drizzle with olive oil, dust with smoked paprika, and serve with warm pita.
