Andalusian Gazpacho

Spain's greatest summer dish — raw tomatoes, cucumber, pepper, and garlic blended with excellent olive oil and sherry vinegar into a cold, silky soup that is simultaneously refreshing and deeply savoury.

  • 1 kg very ripe tomatoes, roughly chopped
  • 1 cucumber, peeled, seeded, and roughly chopped
  • 1 red bell pepper, seeded and roughly chopped

  • 80 g stale white bread, crusts removed, soaked in cold water for 5 minutes
  • 80 ml extra-virgin olive oil, plus extra to serve
  • 2 tbsp sherry vinegar (or red wine vinegar)
  • 1 tsp fine sea salt
  • Cold water, to adjust consistency
  • To garnish: finely diced cucumber, tomato, and pepper; croutons; a drizzle of olive oil; fresh basil

Instructions

  1. 1

Combine the tomatoes, cucumber, red pepper, and garlic in a large bowl. Season with the salt and let sit for 10 minutes — the salt draws out the juices and intensifies the flavour.

  2. 2

Squeeze the soaked bread to remove excess water. Add to the vegetable mixture.

  3. 3

Blend in batches in a high-powered blender until completely smooth — blend each batch for a full 2 minutes. The longer you blend, the silkier the result.

  4. 4

With the blender running, slowly drizzle in the olive oil to emulsify. Add the sherry vinegar.

  5. 5

Strain through a fine sieve, pressing firmly to extract all the liquid. Discard the solids. This step is what separates a restaurant-quality gazpacho from a rough blended salad.

  6. 6

Taste and adjust — more vinegar for acidity, more salt, or a splash of cold water to thin if needed. The gazpacho should be bold and well-seasoned; it will taste less intense when very cold.

  7. 7

Refrigerate for at least 2 hours until very cold. Serve in chilled bowls or glasses, garnished with finely diced vegetables, croutons, a drizzle of your best olive oil, and fresh basil.
