Brown Butter Financiers

The most elegant small cake in the French repertoire — a crisp, golden shell giving way to a moist, intensely nutty almond interior, perfumed with beurre noisette and a hint of vanilla.

Ingredients

  • 150 g unsalted butter, plus extra for greasing
  • 150 g icing sugar, sifted
  • 60 g plain flour
  • 90 g ground almonds
  • ½ tsp baking powder
  • Pinch of fine sea salt
  • 4 large egg whites (do not whisk — use them liquid)
  • 1 tsp vanilla extract
  • Optional: fresh raspberries or a sliver of almond to top each one

Instructions

  1. 1

Make the beurre noisette: melt the butter in a light-coloured saucepan over medium heat. Continue cooking, swirling occasionally, for 5–7 minutes until the milk solids turn a deep golden brown and the butter smells intensely nutty. Pour immediately into a bowl to stop the cooking. Cool to room temperature.

  2. 2

Preheat the oven to 200°C (400°F). Butter the financier moulds (or a mini muffin tin) generously and place in the freezer for 10 minutes — the cold butter creates the signature crisp crust.

  3. 3

Whisk together the icing sugar, flour, ground almonds, baking powder, and salt in a large bowl.

  4. 4

Add the liquid egg whites and vanilla to the dry ingredients and stir until just combined.

  5. 5

Pour in the cooled beurre noisette and fold until the batter is smooth and glossy. Do not overmix.

  6. 6

Fill the cold moulds to three-quarters full. Press a raspberry or almond sliver into the top of each one if using.

  7. 7

Bake for 12–14 minutes until the edges are deep golden and the centres are just set with a slight spring. Cool in the moulds for 5 minutes before unmoulding. Financiers are best eaten the day they are made, still slightly warm.
