Roasted Beet & Goat Cheese Salad

Tender roasted beets on a bed of peppery arugula with creamy goat cheese, toasted walnuts, and a sharp balsamic vinaigrette — a classic combination for good reason.

1 hr4 servings

Ingredients

  • 4 medium beets (mixed colours if available), scrubbed
  • 100 g (3.5 oz) soft goat cheese, crumbled
  • 80 g (3 oz) baby arugula
  • 60 g (½ cup) walnuts, toasted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 small shallot, finely minced
  • Salt and black pepper

Instructions

  1. 1

Preheat oven to 200°C (400°F). Wrap each beet individually in foil. Roast for 45–55 minutes until completely tender when pierced with a knife. Cool, then peel — the skins will slip off easily. Cut into wedges.

  2. 2

Make the vinaigrette: whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, and minced shallot. Season with salt and pepper.

  3. 3

Toss the arugula with half the vinaigrette and arrange on a large serving platter.

  4. 4

Arrange the roasted beet wedges over the arugula.

  5. 5

Scatter the crumbled goat cheese and toasted walnuts over the top.

  6. 6

Drizzle with the remaining vinaigrette. Serve immediately.
