Chashu Pork Belly Ramen

Instructions

  1. 1

Make the chashu: roll the pork belly tightly and tie with kitchen twine. Sear in a hot oiled pan on all sides until golden. Transfer to a snug pot. Add soy sauce, mirin, sake, sugar, and enough water to come halfway up the pork. Simmer covered for 2 hours until very tender. Cool in the liquid, then refrigerate overnight. Slice thickly before serving.

  2. 2

Make marinated eggs: boil eggs for exactly 6 minutes 30 seconds. Transfer to ice water, peel, and marinate in soy sauce and mirin for at least 2 hours.

  3. 3

Make the broth: bring the stock to a simmer. Whisk in the milk, miso paste, and sesame paste until smooth. Simmer gently for 10 minutes. Season with salt.

  4. 4

Cook the ramen noodles according to package instructions. Drain well.

  5. 5

Sear the sliced chashu in a hot pan for 1–2 minutes per side until caramelised.

  6. 6

Divide the noodles among deep bowls. Ladle the hot broth over. Top with chashu slices, halved marinated eggs, corn, bamboo shoots, nori, spring onions, and sesame seeds. Finish with a drizzle of chilli oil.
