Spinach & Ricotta Cannelloni

Instructions

  1. 1

Preheat oven to 190°C (375°F). Make the tomato sauce: sauté garlic in olive oil for 1 minute, add crushed tomatoes and oregano, simmer for 15 minutes. Season well.

  2. 2

Combine ricotta, squeezed spinach, half the Parmesan, the egg, and nutmeg. Season generously with salt and pepper.

  3. 3

Transfer the filling to a piping bag or zip-lock bag with the corner snipped. Pipe the filling into each dry cannelloni tube.

  4. 4

Spread half the tomato sauce in the base of a large baking dish. Arrange the filled cannelloni in a single layer on top.

  5. 5

Pour the remaining tomato sauce over the cannelloni, ensuring all the pasta is covered. Scatter over the mozzarella and remaining Parmesan.

  6. 6

Cover tightly with foil and bake for 35 minutes. Remove the foil and bake for a further 15 minutes until bubbling and golden. Rest for 10 minutes before serving.
