Beef Rendang

Indonesia's most celebrated dish — beef slow-cooked in a fragrant spice paste and coconut milk until every drop of liquid evaporates and the meat caramelises in its own rendered fat, becoming impossibly tender and deeply complex.

Instructions

  1. 1

Blend all the spice paste ingredients with a splash of water until completely smooth. This is the flavour foundation — take your time to get it silky.

  2. 2

Heat the oil in a large, wide pot over medium heat. Fry the spice paste for 8–10 minutes, stirring constantly, until it darkens, the raw smell cooks off, and the oil begins to separate from the paste.

  3. 3

Add the beef and stir to coat every piece in the paste. Cook for 5 minutes until the beef is sealed on the outside.

  4. 4

Pour in the coconut milk and coconut cream. Add the kaffir lime leaves, bruised lemongrass, cinnamon, cloves, cardamom, palm sugar, and tamarind. Stir to combine and bring to a gentle boil.

  5. 5

Reduce to a steady simmer and cook uncovered for 1.5–2 hours, stirring occasionally, until the coconut milk has reduced significantly and the sauce is thick and dark.

  6. 6

Continue cooking, now stirring more frequently, as the remaining liquid evaporates. The rendang will begin to fry in the coconut oil — this is the critical stage. Stir constantly for 20–30 minutes until the beef is dark, dry, and caramelised.

  7. 7

Taste and adjust with salt and sugar. The rendang should be intensely savoury, warmly spiced, and slightly sweet. Serve over steamed jasmine rice scattered with crispy fried shallots.
