Seared Scallops with Pea Purée & Brown Butter

The most technically satisfying 25-minute dish — scallops seared in a screaming-hot pan until they develop a deep mahogany crust, served over a vibrant pea purée with nutty brown butter and crispy pancetta.

25 min4 servings

Ingredients

  • 12 large sea scallops, patted completely dry, roe removed
  • For the pea purée: 400 g frozen peas, 2 tbsp unsalted butter, 2 tbsp crème fraîche, 1 clove garlic (minced), salt and white pepper
  • For the brown butter: 80 g unsalted butter, 1 tbsp small capers, juice of ½ lemon
  • 100 g pancetta or streaky bacon, cut into lardons
  • 2 tbsp neutral oil with a high smoke point
  • Salt and cracked black pepper
  • Fresh pea shoots or micro herbs, to garnish

Instructions

  1. 1

Make the pea purée: cook the peas in boiling salted water for 2 minutes. Drain, reserving a little cooking water. Blend with the butter, crème fraîche, and garlic until completely smooth. Season generously. Keep warm.

  2. 2

Cook the pancetta in a dry pan over medium-high heat until crispy and golden. Remove with a slotted spoon and drain on paper towel.

  3. 3

Pat the scallops completely dry with paper towel — any moisture will steam rather than sear. Season one side generously with salt and pepper just before cooking.

  4. 4

Heat the oil in a large, heavy-based pan (ideally cast iron) over the highest possible heat until the oil is shimmering and just beginning to smoke. This is non-negotiable — a hot pan is everything.

  5. 5

Place the scallops seasoned-side down in the pan, leaving space between each one. Do not move them. Cook for 90 seconds to 2 minutes until a deep golden-brown crust has formed. Season the top side, then flip and cook for 60 seconds only. Remove immediately.

  6. 6

Make the brown butter: wipe the pan clean, add the butter and cook over medium heat until the milk solids turn golden brown and smell nutty. Add the capers and lemon juice — it will spit. Remove from heat.

  7. 7

Spoon the warm pea purée onto warm plates. Place 3 scallops on each plate. Scatter the crispy pancetta around. Spoon the brown butter and capers over the scallops. Garnish with pea shoots and serve immediately.
