Instructions

  1. 1

Preheat the oven to 180°C (350°F). Grease a 20 × 30 cm baking dish or 8 individual pudding moulds. Place the dates in a bowl, pour over the boiling water, and stir in the bicarbonate of soda. Leave to soak for 10 minutes — the dates will soften and the mixture will foam.

  2. 2

Blend the date mixture until smooth (or leave chunky for more texture). Cool slightly.

  3. 3

Beat the butter and muscovado sugar together until light and fluffy, about 3 minutes. Beat in the eggs one at a time, then the vanilla.

  4. 4

Fold in the flour and baking powder until just combined. Stir in the date purée — the batter will be quite loose.

  5. 5

Pour into the prepared dish and bake for 25–30 minutes (20 minutes for individual moulds) until a skewer comes out clean and the top springs back when pressed.

  6. 6

Make the toffee sauce while the sponge bakes: combine the butter, sugar, and cream in a saucepan over medium heat. Stir until the butter melts and the sugar dissolves. Simmer for 3–4 minutes until the sauce thickens and coats the back of a spoon. Add the vanilla and salt.

  7. 7

Poke the warm sponge all over with a skewer and pour half the toffee sauce over it, allowing it to soak in for 5 minutes. Serve in generous portions with the remaining warm sauce poured over and a scoop of vanilla ice cream alongside.
