Lemon Posset

The most elegant three-ingredient dessert — double cream set by the acidity of fresh lemon juice alone, no gelatine required, resulting in a silky, trembling cream with a pure, bright citrus flavour.

Ingredients

  • 600 ml double cream
  • 150 g caster sugar
  • Juice of 3 large lemons (about 90 ml), plus zest of 2 lemons
  • To serve: fresh raspberries or blueberries, shortbread biscuits, extra lemon zest

Instructions

  1. 1

Combine the double cream and caster sugar in a medium saucepan. Heat over medium heat, stirring until the sugar dissolves.

  2. 2

Bring to a full, rolling boil and boil for exactly 3 minutes, stirring occasionally. Watch it carefully — the cream can boil over quickly.

  3. 3

Remove from heat and stir in the lemon juice and zest. The mixture will thicken slightly as the acid reacts with the cream proteins.

  4. 4

Cool for 10 minutes, then strain through a fine sieve to remove the zest and any lumps. Taste — it should be intensely lemony and very sweet. The flavour mellows as it sets.

  5. 5

Pour into 6 small glasses, ramekins, or serving cups. Do not fill more than three-quarters full.

  6. 6

Refrigerate for at least 4 hours, or overnight. The posset will set to a soft, trembling cream — it should hold its shape when tilted but still have a gentle wobble.

  7. 7

Serve cold, topped with fresh raspberries or blueberries and a curl of lemon zest. Place a shortbread biscuit on the side for contrast. The posset will keep refrigerated for up to 3 days.
