Harissa Shakshuka

A fiery, deeply spiced shakshuka built on harissa paste and roasted red peppers — eggs poached directly in the bubbling sauce until the whites are just set and the yolks remain gloriously runny.

30 min4 servings

Ingredients

  • 6 large eggs
  • 2 tbsp harissa paste (rose or regular)
  • 400 g canned whole tomatoes, crushed by hand
  • 2 roasted red peppers (jarred), roughly chopped
  • 1 large onion, finely diced
  • 4 cloves garlic, thinly sliced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • 3 tbsp extra-virgin olive oil
  • Salt and black pepper
  • To serve: crumbled feta, fresh coriander, warm flatbreads or crusty bread

Instructions

  1. 1

Heat the olive oil in a large, deep skillet over medium heat. Add the onion and cook for 8 minutes until soft and golden at the edges.

  2. 2

Add the garlic, cumin, smoked paprika, and ground coriander. Cook for 1–2 minutes until fragrant, stirring constantly.

  3. 3

Add the harissa paste and stir into the onion mixture. Cook for 2 minutes — the paste will darken slightly and become very aromatic.

  4. 4

Add the crushed tomatoes and roasted red peppers. Stir to combine, then simmer over medium-low heat for 15 minutes until the sauce has thickened and the oil has risen to the surface. Season generously.

  5. 5

Taste the sauce — it should be bold, smoky, and spicy. Adjust the harissa, salt, or a pinch of sugar if needed.

  6. 6

Make 6 wells in the sauce with the back of a spoon. Crack an egg into each well. Cover the pan and cook over medium-low heat for 6–8 minutes until the whites are set but the yolks are still runny. Check at 6 minutes.

  7. 7

Remove from heat immediately. Scatter with crumbled feta and fresh coriander. Drizzle with a little extra olive oil. Serve straight from the pan with warm flatbreads for scooping.
