Miso-Glazed Black Cod

The iconic Nobu-inspired dish — silky black cod marinated in a sweet white miso glaze and broiled until caramelised and lacquered. Impossibly rich, impossibly easy.

Ingredients

  • 4 black cod fillets (about 180 g / 6 oz each), skin on
  • 80 g (⅓ cup) white (shiro) miso paste
  • 3 tbsp mirin
  • 3 tbsp sake
  • 2 tbsp caster sugar
  • 1 tbsp soy sauce
  • Steamed rice, bok choy, and pickled ginger, to serve

Instructions

  1. 1

Make the marinade: combine the miso, mirin, sake, sugar, and soy sauce in a small saucepan over medium heat. Stir for 2–3 minutes until the sugar dissolves and the mixture is smooth. Cool completely.

  2. 2

Pat the cod fillets dry. Place in a shallow dish and coat all over with the miso marinade. Cover and refrigerate for at least 24 hours, or up to 3 days — the longer, the better.

  3. 3

When ready to cook, preheat the oven grill (broiler) to high. Line a baking tray with foil and lightly oil it.

  4. 4

Wipe the excess marinade from the fish (leaving a thin coating). Place skin-side down on the prepared tray.

  5. 5

Grill (broil) for 8–10 minutes until the top is deeply caramelised and the fish is just cooked through and flakes easily. Watch carefully — the sugars can burn quickly.

  6. 6

Serve immediately over steamed rice with blanched bok choy and pickled ginger on the side.
