Mango & Coconut Chia Pudding

Instructions

  1. 1

Whisk together the coconut milk, chia seeds, maple syrup, and vanilla in a bowl or jar. Stir vigorously for 2 minutes to prevent clumping.

  2. 2

Refrigerate for at least 4 hours or overnight. After 30 minutes, stir once more to break up any clumps that have formed.

  3. 3

Blend half the mango with the lime juice until completely smooth to make the purée. Dice the remaining mango.

  4. 4

To assemble, spoon a layer of chia pudding into glasses, followed by a layer of mango purée, then more chia pudding.

  5. 5

Top with fresh diced mango, toasted coconut flakes, and a sprig of mint. Serve chilled.
