  • 1 tsp ground cumin

Instructions

  1. 1

Preheat oven to 220°C (425°F). Toss the cauliflower florets and onion with 2 tbsp olive oil, cumin, turmeric, salt, and pepper on a large baking sheet. Nestle in the unpeeled garlic cloves. Roast for 30–35 minutes, turning once, until deeply golden and caramelised. Reserve a handful of the best florets for garnish.

  2. 2

Squeeze the garlic out of its skins.

  3. 3

Transfer the roasted cauliflower, onion, and garlic to a large pot. Add the stock and bring to a simmer. Cook for 10 minutes.

  4. 4

Use an immersion blender to blend until completely smooth. Stir in the coconut cream. Simmer for 5 minutes. Season generously with salt and pepper.

  5. 5

If the soup is too thick, add a little more stock to reach your preferred consistency.

  6. 6

Ladle into bowls. Top with the reserved roasted florets, a drizzle of olive oil, and a pinch of smoked paprika.
