Pappardelle with Brown Butter & Sage

Instructions

  1. 1

Mound the flour on a clean surface, make a well in the centre, and crack in the eggs. Use a fork to gradually incorporate the flour from the inside out until a shaggy dough forms.

  2. 2

Knead the dough for 8–10 minutes until smooth and elastic. Wrap in cling film and rest at room temperature for 30 minutes.

  3. 3

Roll the dough to about 2 mm thickness using a pasta machine or rolling pin. Dust generously with flour, loosely roll up, and cut into 2 cm wide ribbons. Shake out and dust again.

  4. 4

Cook the pappardelle in well-salted boiling water for 2–3 minutes until just al dente. Reserve a ladleful of pasta water before draining.

  5. 5

Meanwhile, melt the butter in a wide skillet over medium heat. Once it foams, add the sage leaves. Cook, swirling the pan, until the butter turns deep golden and smells nutty, about 3–4 minutes. Remove the sage to a plate.

  6. 6

Add the drained pasta to the brown butter with a splash of pasta water. Toss vigorously over low heat until the sauce coats every ribbon.

  7. 7

Divide between warm bowls. Top with crispy sage, a generous snowfall of Parmesan, and a crack of black pepper.
