Instructions

  1. 1

Make the tare: whisk together both misos, soy sauce, sesame oil, and mirin until smooth. This concentrated paste is the soul of the broth — it keeps refrigerated for weeks.

  2. 2

Marinate the eggs: peel the soft-boiled eggs and submerge in a mixture of 3 tbsp soy sauce, 1 tbsp mirin, and 100 ml water for at least 1 hour. They will turn a beautiful amber.

  3. 3

Sauté the corn: cook the corn kernels in a knob of butter over high heat for 3–4 minutes until lightly charred and sweet. Season with salt.

  4. 4

Make the broth: heat the sesame oil in a saucepan over medium heat. Cook the garlic and ginger for 1 minute. Add the stock and bring to a simmer. Cook for 5 minutes.

  5. 5

Whisk 2–3 tbsp of the tare into the hot broth. Taste — it should be deeply savoury and well-seasoned. Add more tare as needed.

  6. 6

Cook the noodles according to packet instructions. Drain and divide between two warmed bowls.

  7. 7

Ladle the hot broth over the noodles. Add a knob of butter to each bowl and let it melt on the surface. Arrange the corn, chashu pork, halved marinated egg, spring onions, and nori on top. Finish with sesame seeds and white pepper. Serve immediately.
