Dark Chocolate Fondant

The most dramatic dessert in the repertoire — a dark chocolate shell that yields to a flowing, molten centre, served with a quenelle of vanilla ice cream that melts on contact with the warm cake.

Ingredients

  • 200 g dark chocolate (70%), roughly chopped
  • 200 g unsalted butter, cut into cubes, plus extra for greasing
  • 4 large eggs plus 4 egg yolks
  • 200 g caster sugar
  • 80 g plain flour, sifted
  • Pinch of fine sea salt
  • Cocoa powder, for dusting
  • To serve: vanilla ice cream or crème fraîche, icing sugar for dusting

Instructions

  1. 1

Butter 6 individual ramekins (150 ml capacity) generously, then dust with cocoa powder, tapping out the excess. This creates a non-stick surface and adds flavour. Refrigerate.

  2. 2

Melt the chocolate and butter together in a heatproof bowl over barely simmering water, stirring until smooth. Remove from heat and cool for 5 minutes.

  3. 3

Whisk the eggs, egg yolks, and sugar together for 3–4 minutes until pale and slightly thickened.

  4. 4

Pour the chocolate mixture into the egg mixture and fold gently until combined. Fold in the flour and salt until just incorporated — do not overmix.

  5. 5

Divide the batter between the prepared ramekins. At this point the fondants can be refrigerated for up to 24 hours — this is the make-ahead advantage.

  6. 6

Preheat the oven to 200°C (400°F). Bake the fondants for 10–12 minutes (12–13 minutes if baking from cold). The edges should be set and pulling away from the sides, but the centre should still have a distinct wobble.

  7. 7

Run a knife around the edge of each fondant and immediately invert onto warm plates. Leave the ramekin in place for 10 seconds, then lift. Dust with icing sugar and serve at once with vanilla ice cream. The molten centre waits for no one.
