Birria Tacos (Quesabirria)

The viral taco sensation — beef slow-braised in a deep chilli consommé, shredded and packed into corn tortillas dipped in the braising fat, then griddled until crispy and loaded with melted cheese.

Instructions

  1. 1

Toast the dried chillies in a dry pan for 30 seconds per side until fragrant. Remove stems and seeds. Soak in boiling water for 20 minutes until softened.

  2. 2

Blend the soaked chillies with the onion, garlic, tomatoes, vinegar, and all the spices until completely smooth. Season generously with salt.

  3. 3

Season the beef and sear in batches in a hot Dutch oven until deeply browned on all sides. Pour the chilli paste over the beef, add the stock, and bring to a simmer.

  4. 4

Cover and braise at 160°C (325°F) for 3–3.5 hours until the beef is completely tender and shreds easily with two forks. Remove the beef and shred it. Strain the consommé and keep warm — this is your dipping broth.

  5. 5

Skim the fat from the surface of the consommé and reserve it in a shallow bowl — this is what you dip the tortillas in for frying.

  6. 6

Dip a corn tortilla briefly in the reserved fat. Place in a hot griddle or cast-iron pan. Add a handful of shredded beef and cheese to one half. Fold over and cook for 2–3 minutes per side until crispy and the cheese is melted.

  7. 7

Serve the tacos immediately topped with diced white onion and fresh coriander, with a small bowl of hot consommé alongside for dipping. A squeeze of lime over everything is essential.
