Seafood Paella Valenciana

A proper Spanish paella built in a wide pan over high heat — saffron-stained rice, sweet sofrito, and a market haul of seafood, finished with the prized socarrat crust on the base.

Instructions

  1. 1

Heat the olive oil in a 38–40 cm paella pan or the widest pan you own over medium-high heat. Fry the chorizo until the fat renders and it is lightly crisp. Remove and set aside.

  2. 2

In the same pan, cook the onion and red pepper for 8 minutes until soft. Add the garlic and smoked paprika and cook for 1 minute. Add the tomatoes and cook, stirring, for 10 minutes until the sofrito is thick and jammy.

  3. 3

Add the rice and stir to coat in the sofrito for 2 minutes. Pour in the warm stock and saffron water. Stir once to distribute the rice evenly — do not stir again after this point.

  4. 4

Bring to a vigorous boil, then reduce to a steady simmer. Nestle the chorizo back into the rice. Cook for 10 minutes.

  5. 5

Arrange the squid, shrimp, and mussels over the rice, pressing them lightly into the surface. Cook for a further 8–10 minutes until the seafood is cooked and the mussels have opened.

  6. 6

To develop the socarrat (the prized crispy base), increase the heat to high for the final 2 minutes. Listen for a gentle crackling sound — this means the crust is forming. Remove from heat when you smell a faint toasty aroma.

  7. 7

Cover with foil and rest for 5 minutes. Scatter with fresh parsley and serve directly from the pan with lemon wedges. The socarrat is the cook's reward — scrape it up and share it.
