Gratin Dauphinois

The definitive French potato gratin — thinly sliced potatoes layered with garlic-infused cream and Gruyère, baked until golden, bubbling, and meltingly tender.

Ingredients

  • 1.2 kg (2.6 lbs) waxy potatoes (such as Yukon Gold), peeled and very thinly sliced (2 mm)
  • 400 ml (1⅔ cups) heavy cream
  • 200 ml (¾ cup) whole milk
  • 3 cloves garlic, minced
  • 1 tsp fine salt
  • ¼ tsp ground nutmeg
  • White pepper
  • 150 g (1½ cups) Gruyère cheese, grated
  • 1 tbsp unsalted butter (for the dish)

Instructions

  1. 1

Preheat oven to 170°C (340°F). Butter a large baking dish generously.

  2. 2

Combine the cream, milk, garlic, salt, nutmeg, and white pepper in a large saucepan. Add the sliced potatoes and bring to a gentle simmer over medium heat, stirring occasionally. Cook for 8–10 minutes until the potatoes are just starting to soften and the cream has thickened slightly.

  3. 3

Transfer half the potato mixture to the prepared dish, spreading evenly. Scatter with half the Gruyère.

  4. 4

Add the remaining potatoes and pour over all the cream from the pan. Scatter the remaining Gruyère evenly over the top.

  5. 5

Cover tightly with foil and bake for 45 minutes. Remove the foil and bake for a further 30–35 minutes until the top is deeply golden and the potatoes are completely tender when pierced with a knife.

  6. 6

Rest for 10–15 minutes before serving — this allows the cream to set slightly for cleaner portions.
