Instructions

  1. 1

Peel the prawns, reserving all the shells. Set the prawn meat aside in the refrigerator.

  2. 2

Heat butter and oil in a large pot over high heat. Add the prawn shells and cook, stirring, for 3–4 minutes until they turn pink and begin to char slightly. This builds the base flavour.

  3. 3

Add the onion, celery, carrot, and garlic. Cook for 5 minutes until softened. Add the tomato paste, paprika, and cayenne and stir for 1 minute.

  4. 4

Add the brandy and carefully ignite with a long match (or simply cook off the alcohol for 1 minute). Add the white wine and reduce by half. Add the stock and simmer for 20 minutes.

  5. 5

Strain the stock through a fine sieve, pressing hard on the shells to extract all the flavour. Discard the solids. Return the strained bisque to the pot.

  6. 6

Add the cream and simmer for 5 minutes. Add the reserved prawn meat and cook for 2–3 minutes until just pink. Season with salt. Serve in warm bowls, garnished with chives.
