Instructions

  1. 1

Score the duck skin in a crosshatch pattern, cutting through the fat but not into the flesh. Season all over with salt, pepper, and five-spice.

  2. 2

Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium. Cook for 12–15 minutes, pouring off the rendered fat occasionally, until the skin is deeply golden and crispy.

  3. 3

Flip and cook for 4–5 minutes more for medium-rare (internal temperature 57°C / 135°F). Rest on a board, skin-side up, for 8 minutes.

  4. 4

Make the sauce: pour off most of the fat from the pan. Add the sugar and cook over medium heat until it caramelises to a deep amber. Add the vinegar — it will spit — then the orange juice, lemon juice, and zest. Stir to deglaze.

  5. 5

Add the stock and Grand Marnier if using. Simmer for 5–6 minutes until the sauce reduces and coats the back of a spoon. Swirl in the cold butter.

  6. 6

Slice the duck breasts on the diagonal. Fan onto plates. Spoon the orange sauce over and around. Garnish with fresh thyme and orange slices.
