Rustic Peach Galette

The most forgiving tart in the French repertoire — a free-form pastry folded around juicy summer peaches with almond cream, where imperfection is not just acceptable but the whole point.

1 hr8 servings

Ingredients

  • For the pastry: 200 g plain flour, 1 tbsp caster sugar, pinch of salt, 120 g cold unsalted butter (cubed), 3–4 tbsp ice-cold water
  • For the frangipane: 60 g unsalted butter (softened), 60 g caster sugar, 1 large egg, 60 g ground almonds, 1 tbsp plain flour, ½ tsp almond extract
  • For the filling: 5–6 ripe peaches, halved, stoned, and sliced 1 cm thick, 2 tbsp caster sugar, 1 tsp vanilla extract, 1 tsp cornflour
  • 1 egg, beaten (egg wash)
  • 2 tbsp demerara sugar
  • Crème fraîche or vanilla ice cream, to serve

Instructions

  1. 1

Make the pastry: pulse the flour, sugar, salt, and butter until the mixture resembles coarse breadcrumbs. Add the water one tablespoon at a time until the dough just comes together. Flatten into a disc, wrap, and refrigerate for 30 minutes.

  2. 2

Make the frangipane: beat the butter and sugar until pale. Beat in the egg, then fold in the ground almonds, flour, and almond extract until smooth.

  3. 3

Toss the peach slices with the caster sugar, vanilla, and cornflour. Set aside for 10 minutes.

  4. 4

Preheat the oven to 200°C (400°F). Roll the pastry on a lightly floured sheet of baking paper into a rough 35 cm circle — it doesn't need to be perfect.

  5. 5

Spread the frangipane over the pastry, leaving a 5 cm border. Arrange the peach slices over the frangipane in overlapping concentric circles or simply tumble them on — both are beautiful.

  6. 6

Fold the pastry border up and over the edge of the fruit, pleating as you go. Brush the pastry with egg wash and scatter generously with demerara sugar.

  7. 7

Slide the galette (still on the baking paper) onto a baking tray. Bake for 35–40 minutes until the pastry is deep golden and the peaches are tender and caramelised at the edges. Cool for 15 minutes before slicing. Serve warm with crème fraîche.
