Osso Buco alla Milanese

Milan's great braised veal shank — slow-cooked in white wine and vegetables until the meat falls from the bone and the marrow melts into the sauce, finished with a bright gremolata and served over saffron risotto.

Instructions

  1. 1

Tie kitchen twine around the circumference of each veal shank to hold its shape during braising. Season generously and dust lightly with flour, shaking off the excess.

  2. 2

Heat the olive oil in a large Dutch oven over medium-high heat. Brown the shanks for 4 minutes per side until deeply golden. Remove and set aside.

  3. 3

Reduce heat to medium. Add the butter, onion, carrot, and celery. Cook for 10 minutes until soft and golden. Add the garlic and cook for 1 minute.

  4. 4

Pour in the white wine and scrape up all the browned bits. Reduce by half. Add the tomatoes and stock. Nestle the shanks back in, standing upright so the marrow stays in the bone.

  5. 5

Add the thyme and bay leaves. The liquid should come halfway up the shanks. Bring to a simmer, cover, and braise at 160°C (325°F) for 1.5–2 hours until the meat is completely tender and pulling away from the bone.

  6. 6

Make the gremolata: combine the lemon zest, minced garlic, and parsley. This bright, raw condiment is the essential counterpoint to the rich braise.

  7. 7

Remove the twine. Taste the sauce and reduce over high heat if it needs thickening. Serve each shank over saffron risotto, spooning the braising sauce generously over. Scatter the gremolata over at the last moment.
