Instructions

  1. 1

Make the kofta: combine all kofta ingredients in a bowl and mix thoroughly with your hands for 2 minutes until the mixture is cohesive and slightly sticky. This develops the proteins and keeps the meatballs together during cooking.

  2. 2

Roll into walnut-sized balls — about 24 total. Refrigerate for 15 minutes to firm up.

  3. 3

Heat the olive oil in a large, wide pan over medium-high heat. Brown the kofta in batches for 3–4 minutes, turning to colour all sides. They don't need to be cooked through. Remove and set aside.

  4. 4

In the same pan, cook the onion over medium heat for 6 minutes until soft. Add the garlic, cumin, paprika, and cinnamon. Cook for 1–2 minutes until fragrant.

  5. 5

Add the crushed tomatoes and preserved lemon rind. Stir to combine and bring to a simmer. Season with salt.

  6. 6

Return the kofta to the sauce. Partially cover and simmer gently for 15–20 minutes until the kofta are cooked through and the sauce has thickened around them.

  7. 7

Taste the sauce and adjust seasoning. Scatter with fresh coriander and serve straight from the pan with warm flatbreads, a generous spoonful of yoghurt, and harissa on the side.
