Carbonara Risotto

Two Italian classics in one — a silky risotto finished carbonara-style with a rich egg yolk and Pecorino emulsion, crispy guanciale, and a blizzard of cracked black pepper.

Instructions

  1. 1

Fry the guanciale in a dry pan over medium heat until the fat renders and the pieces are crispy. Remove with a slotted spoon and drain on paper towel. Reserve the rendered fat.

  2. 2

In a wide, heavy saucepan, heat the olive oil and 1 tbsp butter over medium heat. Cook the onion for 6 minutes until completely soft. Add the garlic and cook for 1 minute.

  3. 3

Add the rice and toast for 2 minutes, stirring constantly, until the grains are translucent at the edges and smell nutty. Add the white wine and stir until fully absorbed.

  4. 4

Add the hot stock one ladleful at a time, stirring constantly and waiting until each addition is absorbed before adding the next. This process takes 18–20 minutes. The rice should be al dente — tender with a slight bite.

  5. 5

Whisk the egg yolks with the Pecorino and Parmigiano. Add 2 tbsp of the hot stock to the egg mixture and whisk to temper it — this prevents scrambling.

  6. 6

Remove the risotto from heat. Stir in the remaining butter (mantecatura) vigorously until the risotto is creamy and flows like lava. Pour in the egg and cheese mixture and fold quickly — the residual heat will cook the eggs to a silky, glossy sauce.

  7. 7

Fold in most of the crispy guanciale. Taste and season — it may need very little salt as the cheese and guanciale are already salty. Serve immediately in warm bowls, topped with the remaining guanciale, extra Pecorino, and a truly generous amount of cracked black pepper.
