Instructions

  1. 1

Combine all marinade ingredients with the chicken thighs. Mix thoroughly, cover, and refrigerate for at least 4 hours or overnight — the longer the better.

  2. 2

Cook the chicken under a very hot grill or in a screaming-hot cast-iron pan for 5–6 minutes per side until charred in spots and just cooked through. Set aside to rest, then cut into large chunks.

  3. 3

In a heavy saucepan, heat the butter and oil over medium heat. Cook the onion for 10 minutes until deep golden. Add the garlic and ginger and cook for 2 minutes more.

  4. 4

Add the tomatoes and all the ground spices. Simmer uncovered for 20 minutes, stirring occasionally, until the sauce is thick and the oil begins to separate at the edges.

  5. 5

Blend the sauce until completely smooth using a stick blender or standing blender. Pass through a sieve for a restaurant-smooth result. Return to the pan.

  6. 6

Add the grilled chicken pieces and the cream. Simmer gently for 10 minutes. Crush the kasuri methi between your palms and stir in — this is the signature flavour note.

  7. 7

Taste and balance with sugar, salt, and a squeeze of lemon. Serve over basmati rice with warm naan and a drizzle of extra cream.
