Instructions

  1. 1

Preheat oven to 200°C (400°F). Toss the pumpkin chunks and onion with 2 tbsp olive oil, salt, and pepper on a large baking sheet. Nestle in the unpeeled garlic cloves.

  2. 2

Roast for 35–40 minutes, turning once, until the pumpkin is tender and caramelised at the edges. Squeeze the garlic out of its skins.

  3. 3

Heat the remaining oil in a large pot over medium heat. Add the cumin, coriander, and nutmeg and toast for 30 seconds.

  4. 4

Add the roasted pumpkin, onion, garlic, and stock. Bring to a simmer and cook for 5 minutes.

  5. 5

Use an immersion blender to blend until completely smooth. Stir in the coconut cream. Simmer for 5 minutes more. Season generously with salt and pepper.

  6. 6

Ladle into bowls. Swirl in a little extra cream, scatter with toasted pumpkin seeds, and garnish with fresh chives.
