  • ½ tsp fine salt
  • 1 tsp ground cinnamon

  • 150 g (¾ cup) light brown sugar

Instructions

  1. 1

    Preheat oven to 175°C (350°F). Grease a 23 x 13 cm (9 x 5 inch) loaf tin and line with parchment.

  2. 2

Whisk together the flour, baking soda, salt, and cinnamon in a bowl.

  3. 3

In a large bowl, whisk the melted butter and brown sugar until combined. Add the eggs, vanilla, and sour cream and whisk until smooth. Stir in the mashed bananas.

  4. 4

Fold the dry ingredients into the wet ingredients until just combined — a few streaks of flour are fine. Fold in the chocolate chips.

  5. 5

Pour into the prepared tin. Scatter extra chocolate chips over the top.

  6. 6

Bake for 55–65 minutes until a skewer inserted in the centre comes out with just a few moist crumbs. If the top browns too quickly, tent loosely with foil. Cool in the tin for 15 minutes before turning out.
