  • 60 g (4 tbsp) unsalted butter
  • 500 ml (2 cups) whole milk
  • 200 ml (¾ cup) heavy cream

Butterscotch Pudding

Instructions

  1. 1

Melt the butter in a medium saucepan over medium heat. Continue cooking, swirling occasionally, until the butter turns deep golden brown and smells nutty, about 4–5 minutes. Add the brown sugar and stir until dissolved, about 2 minutes.

  2. 2

Whisk in the milk and cream. Bring to a gentle simmer, stirring to dissolve the sugar completely.

  3. 3

In a bowl, whisk together the egg yolks and cornstarch until smooth. Slowly ladle about 250 ml (1 cup) of the hot milk mixture into the egg mixture, whisking constantly to temper.

  4. 4

Pour the tempered egg mixture back into the saucepan. Cook over medium heat, stirring constantly, for 4–6 minutes until the pudding thickens and begins to bubble. Cook for 1 minute more.

  5. 5

Remove from heat. Stir in the vanilla, salt, and whisky if using.

  6. 6

Pour through a fine sieve into 6 glasses or ramekins. Press cling film directly onto the surface to prevent a skin forming. Refrigerate for at least 3 hours until set. Serve topped with whipped cream and a pinch of flaky sea salt.
