  • 1 tsp vanilla extract
  • 2 tbsp Marsala wine or dark rum (optional)

  • Good quality cocoa powder, to dust
  • Dark chocolate shavings, to serve (optional)

Instructions

  1. 1

Beat the egg yolks and sugar together with an electric mixer for 4–5 minutes until pale, thick, and ribbon-like. Beat in the mascarpone and vanilla until smooth. Stir in the Marsala if using.

  2. 2

In a clean bowl, whisk the egg whites to stiff peaks. Gently fold the egg whites into the mascarpone mixture in three additions until just combined and airy.

  3. 3

Pour the cooled espresso into a shallow bowl. Briefly dip each ladyfinger — about 1 second per side — into the coffee. Do not soak them or they will become soggy.

  4. 4

Break the dipped ladyfingers to fit and layer them in the base of 6 glasses or ramekins.

  5. 5

Spoon a generous layer of mascarpone cream over the biscuits. Add another layer of dipped ladyfingers, then finish with a final layer of cream.

  6. 6

Cover and refrigerate for at least 4 hours, or overnight. Just before serving, dust generously with cocoa powder and add chocolate shavings if desired.
