Instructions

  1. 1

Wilt the spinach in a large pan over high heat with a splash of water. Drain thoroughly and squeeze out as much liquid as possible — excess moisture will make the pastry soggy. Roughly chop.

  2. 2

Cook the onion in a little olive oil over medium heat for 8 minutes until soft. Add the garlic and cook for 1 minute. Cool completely.

  3. 3

Combine the spinach, onion mixture, feta, eggs, dill, parsley, and nutmeg in a large bowl. Season with pepper — the feta provides enough salt. Mix well.

  4. 4

Preheat the oven to 190°C (375°F). Keep the phyllo sheets covered with a damp tea towel as you work — they dry out in seconds.

  5. 5

Lay one phyllo sheet on a clean surface and brush lightly with melted butter. Lay a second sheet on top and brush again. Cut the double layer into 4 long strips.

  6. 6

Place a heaped tablespoon of filling at the bottom of each strip. Fold the corner up diagonally to form a triangle, then continue folding in triangles up the length of the strip, like folding a flag. Brush the outside with butter and sprinkle with sesame seeds.

  7. 7

Place on a lined baking tray and bake for 20–25 minutes until deeply golden and shatteringly crisp. Cool for 5 minutes before serving — the filling will be very hot. These are best eaten the day they are made.
