Tonkotsu Ramen

The king of ramen — a milky-white, collagen-rich pork bone broth simmered for hours until it turns opaque and intensely porky, served with chashu pork belly, a jammy soft-boiled egg, and fresh ramen noodles.

Instructions

  1. 1

Blanch the pork bones in boiling water for 10 minutes. Drain and scrub under cold water to remove all impurities — this is what makes the broth clean-tasting despite its richness.

  2. 2

Place the bones, pork belly, onion, garlic, and ginger in a large pot. Cover with 3 L of cold water. Bring to a vigorous boil and maintain a rolling boil for the entire cooking time — the agitation is what turns the broth milky white. Cook for 4–5 hours, topping up with water as needed.

  3. 3

Remove the pork belly after 2 hours when tender. Make the chashu: combine the soy sauce, mirin, sake, and sugar in a small pan and simmer for 2 minutes. Roll the pork belly tightly, tie with kitchen twine, and simmer in the chashu sauce for 20 minutes. Cool in the sauce, then refrigerate until firm before slicing.

  4. 4

Make the marinated eggs: peel the soft-boiled eggs and submerge in the soy, mirin, and water mixture for at least 2 hours (overnight is better). They will turn a beautiful amber colour.

  5. 5

Strain the finished broth through a fine sieve. It should be opaque, milky, and intensely porky. Season with the tare mixture — start with half and adjust to taste.

  6. 6

Cook the ramen noodles per packet instructions. Drain and divide between deep, pre-warmed bowls.

  7. 7

Ladle the hot broth over the noodles. Top with 2–3 slices of chashu, a halved marinated egg, bamboo shoots, nori, and spring onions. Finish with a drizzle of sesame oil and a pinch of white pepper. Serve immediately.
