Instructions

  1. 1

Make the filling: heat the olive oil in a large skillet over high heat. Cook the shallots for 3 minutes. Add the garlic, thyme, and rosemary and cook for 1 minute. Add the mushrooms and soy sauce. Cook over high heat for 10–12 minutes, stirring often, until all moisture has evaporated and the mushrooms are deeply golden and dry. This is critical — wet filling will make the pastry soggy.

  2. 2

Wilt the spinach in the same pan for 1–2 minutes. Squeeze out all excess moisture and roughly chop. Combine with the mushroom mixture, cream cheese, and Parmesan. Season generously. Cool completely.

  3. 3

Preheat oven to 200°C (400°F). Lay one sheet of puff pastry on a parchment-lined baking tray. Spoon the mushroom filling down the centre, leaving a 4 cm (1.5 inch) border on all sides. Shape into a neat log.

  4. 4

Brush the border with egg wash. Lay the second pastry sheet over the top. Press the edges firmly to seal, then crimp with a fork. Trim any excess pastry.

  5. 5

Brush the entire surface with egg wash. Score a decorative pattern on top with a knife, being careful not to cut all the way through. Refrigerate for 15 minutes.

  6. 6

Bake for 30–35 minutes until deeply golden and crisp. Rest for 5 minutes before slicing. Serve with red wine jus or mushroom gravy.
